Ingredients
- 5 Free Range Eggs
- 2tbsp Almond Meal
- 1/4 cup Full Fat Pure Cream
- 10 Middle Bacon Rashers
- 1 cup Grated Cheddar Cheese
- 1 tbsp Finely Chopped Parsley
- 1 pinch Black Pepper
Method
- Grease a muffin tin (10 tins) with butter
- Line each of the 10 tins with one piece of bacon
- In a bowl mix all the ingredients leaving aside 1/2 cup of the cheese
- Pour mixture into each of the muffin tins
- Sprinkle the remaining cheese on the top of each muffin
- Bake in the oven at 200 degrees until brown and cooked through approximately 1/2 hour
- These can be frozen and reheated in the oven when needed.
