Ingredients

  • 5 Free Range Eggs
  • 2tbsp Almond Meal
  • 1/4 cup Full Fat Pure Cream
  • 10 Middle Bacon Rashers
  • 1 cup Grated Cheddar Cheese
  • 1 tbsp Finely Chopped Parsley
  • 1 pinch Black Pepper

Method

  • Grease a muffin tin (10 tins) with butter
  • Line each of the 10 tins with one piece of bacon
  • In a bowl mix all the ingredients leaving aside 1/2 cup of the cheese
  • Pour mixture into each of the muffin tins
  • Sprinkle the remaining cheese on the top of each muffin
  • Bake in the oven at 200 degrees until brown and cooked through approximately 1/2 hour
  • These can be frozen and reheated in the oven when needed.
