This delicious breakfast can be served either warm or cold (I prefer it warm!)

50 grams chia seeds
100ml water
200mls coconut cream
2 eggs
15 grams coconut oil
1/4 teaspoon vanilla powder (from the bean)
1/4 teaspoon cinnamon ground
tiny pinch Himalayan salt
Mixed Berries to Serve

Combine chia seeds with water and let soak, meanwhile combine all the other ingredients and whisk up, heat gently over low heat until it starts to thicken (or microwave, if that’s your thing). Then mix in the chia mixture. Let sit to thicken, then enjoy! Alternatively, you can make the night before and let it set in the fridge for a really firm pudding.

Combine chia seeds with coconut water in small bowl, stir well and set aside.
Pour coconut cream into TMX bowl. MC on 3min/100C/Sp1
Add eggs, coconut oil, vanilla, cinnamon and salt. MC on 3min/90C/Sp3
Add chia sedd mixture. MC on 10sec/Sp5
Pour custard mixture into 2 ramekins or small bowls, set in the fridge overnight, or serve warm after standing.

Top with fresh berries, chopped nuts or coconut yoghurt!
